These patties make a great snack, to make burgers just make large burger size patties. Great vegetarian alternative to burgers.
3 sweet potatoes
1 cup corn kernels
3 spring onions sliced
2 tbls chopped coriander
1/2 tsp chilli powder
1 tsp cumin powder
1 tsp salt
1 large egg
⅓ cup yellow cornmeal
1 cup plain breadcrumbs
1 cup yellow cornmeal (coating)
Prick the skin of each sweet potato with a fork. Place in a microwaveable dish, cover with cling wrap. Cook for 10 minutes or until sweet potatoes are cooked. Remove from the microwave and leave aside to cool. When the potatoes are cool enough to handle, cut them open and scoop the flesh into a bowl.
Blitz the frozen corn kernels in the food processor, then add to the sweet potatoes, with the spring onions, coriander, salt, cumin, and chilli powder Stir until well combined. Then add the breadcrumbs, 1/3 cup cornmeal, and egg, stir to combine. You can adjust the seasoning to your taste.
Shape the sweet potato mixture into small patties then coat patties with the cornmeal, place in the fridge for 30 minutes, to allow the patties to firm up.
Fry on low heat till golden. Place on a paper towel covered plate to drain.
