Halloumi a white Greek cheese with a firm and rubbery texture and taste like salty mozzarella. When heated halloumi will soften but won’t melt completely. You can grill or pan-fry halloumi, which makes the inside soft and gives the outside a crispy coating.
• 3 tbsp olive oil
• 2 chillies, deseeded and finely sliced
• Or ½ tsp chilli flakes
• 4 garlic cloves, grated
• 250g halloumi cheese,
• 1 handful fresh coriander, chopped
• 1 pinch freshly ground black pepper
• Rind and juice ½ lemon or lime
Slice the Halloumi into 1/2cm slices.
Mix the rest of the ingredients (except the oil) and marinate the halloumi for min 30 mins.
Heat 2 tbsp oil in a frying pan add the halloumi. Fry until golden brown.
Or cook on a grill till golden brown.
