Chicken and spinach pie
1lb boneless chicken small pieces
1 onion chopped
1/2 tsp chilli powder
1/2 tsp salt
1/2 tsp ground pepper
1/2 packet or 1/2 bunch spinach
Soften onion in 1tbsp oil and 1 tbsp butter. Add chicken and spices cook for few mins. Add the spinach and cook till water has evaporated and chicken is cooked. Leave to cool
1 mug milk
1 tbsp butter
1 tbsp flour
Salt and pepper
Place on heat, bring to boil whist whisking all the time till the sauce is thick and bubbling.
Add the sauce to the chicken leave to cool.
When cold mix in 1 cup of grated cheese.
Use this filling to fill puff pastry pies of your choice.
