Salmon burgers


1 lb skinless salmon, cut into pieces

1 1/2 cups  breadcrumbs

1 tbsp. chopped dill

2 spring onions chopped

2 tsp.  mustard

2 tbsp. mayonnaise

Juice and rind of half a lime

1 tsp. salt

1 tsp. pepper

1/2 tsp. chilli flakes

oil for frying


lime & dill mayo:

2 tbsp. mayonnaise

3 tbsp. Greek yogurt

Juice and rind  of half a lime

1 tbsp. dill, chopped

In a  bowl, mix  together 1/2 cup of breadcrumbs, dill, spring onion, mustard, mayonnaise , juice of half a lime, salt, pepper, and chilli flakes.  In a food processor, pulse the salmon pieces making sure the salmon is still chunky to give it texture and not turned into a  paste.
Add the salmon to the bowl with the rest of the mixture and using your hands, mix gently together. Form the mix into patties.  Coat each  patty with the rest of the breadcrumbs. Then place the patty on a lined baking sheet. Once all patties have been formed and coated, place baking sheet into fridge for about 30 minutes to help the coating stick.
In a large frying pan, heat some oil over medium high heat.  Cook the salmon patties for each side for 2 minutes each. They should have a nice golden crust.
Mix together the ingredients for the lime & dill mayonnaise. serve with the patties.

The salmon patties can be eaten in a roll or on there own with a salad
Serve warm.
