Soda Can Chicken
2 whole chicken (with skin)
1 can 0f soda (lemonade or ginger beer)
1 empty can
1 tbls ground garlic
2 tsp chilli powder
2 tablespoons paprika
1 tsp salt
1/2 tsp ground black pepper
2tbls brown sugar
1 tsp cumin powder
1 lemon (juice)
Preheat 180C Gas Mark 4
Discard giblets and neck from chicken, rinse chicken under cold running water. Drain and pat dry.
Mix together all the marinade ingredients together and rub all over and inside the chicken. Leave over night or for at least for a few hour.
Pour half of the soda into the empty can. Place the half-full can of soda in the centre of a roasting tin.
Fit whole chicken over the can of soda with the legs on the bottom; keep upright
Place in the middle of the oven, for about 1 hour or until chicken is cooked. Remove the chicken from the oven and discard the soda can.
Cover the chicken with foil, and rest for 10 minutes before eating.
