Dahi Waras or Daitaras

Dahi Waras

Dahi Waras ( some call them dahitaras) are very close cousins to the middle eastern locomades. These are a Ramadan favourite in my family. Some like them sticky and crispy, me I like the soggy ones at the bottom of the dish.

The syrup:

1 1/2 cups sugar

1 1/2 cups water

Add water and sugar to a pan . Stir until the sugar is dissolved. Boil till the mixture is thick and syrupy.  Add few drops of rose essence. Leave to one-side.


1 cup plain flour

1/2 tsp baking powder

1 tsp ghee (clarified butter)

1/2 cup yogurt

1. Add all the dry ingredients into a bowl. Add the ghee and rub into the flour.

2. Add enough yogurt to form a soft dough.

3. Roll out the dough, Cut with a cookie cutter.

4.. Fry in hot oil, till light golden in colour. Dip into syrup, then place in serving dish.
